Its ultra-local approach is based on an ever-smaller circle of suppliers around the restaurant, ensuring unparalleled freshness and quality while minimizing its carbon footprint. Old habits are being rethought: from waste management to cooking techniques, every aspect of its operation has been scrutinized and improved. Today, 95% of vegetables are cooked without water, drastically reducing consumption of running water, and only 50 liters of household waste are produced per week for the entire kitchen and bathroom.
