Often made from flour from our mills, you should also know that even when bakers source their products elsewhere, they transcend the raw material to prepare baguettes, loaves that are both firm and soft, country breads and excellent pies. Sometimes, they even tend to cook them well, to obtain more crispiness... Trépaïs

This cake is a relatively recent creation which brings together in one recipe, the pastry specialties of the departments making up the old Limousin region. : Corrèze with Galette Corrézienne, Creuse with Creusois and Haute Vienne with Bourgou. Trépaïs also means Three Countries in Limousin patois…
A triangular cake which points in the direction of the three departments, the Trépaïs is made up of a chestnut mousse, a dark chocolate mousse, a hazelnut dacquoise (a sort of meringue) and a crispy hazelnut praline. hazelnut.
The mousses are applied to the praline, set with the dacquoise, all topped with a chocolate icing.

This cake can be found all year round in Brive (Ernst pastry shop) and Objat (Chevreux pastry shop), among these artisan members of the Association of Pastry Chefs of Limousin.

Madeleines

New: “Corrézien Journey”

The Corrèze Bakery-Pâtisserie Federation has developed a travel cake called “Voyage Corrézien”. Exclusively made and sold in Corrèze, this cake uses local products which allows it to benefit from the brand "Origin Corrèze". Since its launch on March 24, 2022, it has been a great success.
