The benefits of honey

Honey often accompanies our cheerful cuisine and therefore makes it a condiment in its own right. Beyond its taste qualities, it is also an interesting product for health. It has also been used for a long time for therapeutic purposes, particularly as a healing agent and for its antibacterial properties. This use has been verified and validated by the scientific community.

Its composition, as everyone knows, is very sweet. However, unlike white sugar, which is essentially composed of sucrose, honey contains several types of carbohydrates: mainly fructose and glucose. The latter are more interesting from a nutritional point of view since they are more easily assimilated by the body which can obtain from them the fuel necessary for its functioning. As a result, it is also a product very popular with athletes who find it a natural energy booster.

Another benefit granted to it: it relieves pain in cases of sore throat or angina. Mix a spoonful of honey with lemon, heat everything and you will obtain a small natural mouthwash.

How is it made?

You should know that honey is the fruit of the work of small workers: honey bees.
Bees gather nectar from flowers which they store in their crop. The sugar level, color and taste vary depending on the plant. Once full, the foragers return to the hive to pass the baton to other bees to move on to the second stage: loading the nectar with enzymes. They swallow and regurgitate the future honey several times in a row before spreading it in cells. The entire hive then works to produce both significant ventilation and a rise in temperature to lower the water level in the nectar. Once done, honey only contains 18% water at most. The cells are closed and completely waterproof.

Honey cannot be enjoyed as is. This is when the beekeeper comes into play. He will harvest the super frames, the artificial hives, uncapped them and insert them into a machine called the “extractor”. With the help of centrifugal force, the honey will flow from the cells and can be harvested. It then contains some impurities. To make it clean, a stage of filtration and then maturation is necessary. The product is finally ready for packaging.
