As a starter or main course, eggs casserole with porcini mushrooms are easy to make and with pieces of mickey or toasted bread... it's so good! This recipe can be made with fresh porcini mushrooms as well as canned porcini mushrooms. 

Porcini mushrooms from Corrèze are very famous for their flavor and fragrance. They can also be combined with potatoes sautéed in duck fat. A delight!

The ingredients of the recipe

  • 4 eggs
  • A few fresh porcini mushrooms (it all depends on the size) or 180g of canned porcini mushrooms
  • 75g smoked bacon
  • 25 cl liquid cream
  • salt
  • 2 garlic cloves
  • Persil
  • Preparation time : 15 mins
  • Cooking time : 10 mins
  • To 4 people

Preparation of egg casserole:

  • Brown the porcini mushrooms in pieces in an oiled pan with garlic and parsley.
  • Place parsley porcini mushrooms with bacon at the bottom of the ramekins.
  • Break an egg into each ramekin
  • Add a pinch of salt to the egg
  • Cover everything with liquid cream
  • Bake in the oven in a bain-marie for 10 minutes (thermostat 6-7). Cooking to be adjusted according to your oven.
