Preparing pumpkin gnocchi

  • Cook the pumpkin, previously cut into pieces, for 10 minutes in boiling water.
  • Leave to drain for 2 hours.
  • Mix and mix the pumpkin puree with the flour and nutmeg and form a ball.
  • Let the dough rest for 1 hour.
  • Make the gnocchi. First of all, by forming small sausages of pasta, then cutting them regularly.
