The Millassou
If you like good local cuisine cooked with simple products, don't miss Millassou or Milhassou (both writings are possible!), this traditional Corrèze recipe 100% Gaillarde.
Ingredients
- 1kg of potatoes (Agata)
- 3 cloves of garlic
- 1 bunch of parsley
- Salt pepper
- 2 large tablespoons of duck fat (it's better!) or 2 tablespoons of oil
- Preparation time : 10 mins
- Cooking time : 20 mins
- To 4 people
Preparation of milhassou
- Peel the potatoes and grate them finely. Add the crushed garlic cloves and the bunch of finely chopped parsley. Generously season with salt and pepper. Mix well.
- Heat the duck fat in a pan and pour in the mixture. Brown (it takes about 10 minutes). When the preparation becomes compact, turn over with the help of a dish and cook the other side, also for 10 minutes.
- The top of the millassou should be crispy on the outside and soft on the inside.
